
A while ago was father's day here in Canada and I decided to make something a little more extravagant than things I have tried in the past. I had learned how to make these the week before from one of my colleagues at the magnetic resonance research center when we were celebrating the success of one of our center's own in his PHD defense.
They were absolutely irresistible at the party. Staring at you with a juicy red allure imagining the gritty taste of the chocolate as it would melt on your tongue. Only to be completely blown away when you find out there is actually cheesecake stuffed inside it! Starting with the more solid tasting chocolate crumbs on top, following by a rich, cool, creamy cheesecake only to explode with the moist sweet taste of the strawberry as you chew down for the second time. That lasts a few seconds until the chocolate coating on the bottom of the strawberry begins to melt and another rich, taste spreads through your mouth starting from the sides and slowing working towards the center of your tongue.
Alas, I was absolutely compelled to make them again. The good thing is, they're really easy to make, they just take some time, but if you're ok with that, they make for a great party desert or maybe even a surprise treat for your girlfriend/boyfriend when they come home from a long day at work.
